I suggest that if the bike is genuine and has a racing history, it is much more valuable if it is as close as possible to what it was in the era. Keep the GP carbs and get a second job. If you make it into a 750, it will lose it's authenticity. You need to do some research. The centre plugged head makes it look as though it was raced.
 
I was just having a close look at your photos. That is a very nice bike - I'm jealous. The tommaselli levers are a nice touch, we used to buy them from the Ducati dealers - Idon't think that type is made any more. The big name on the tank is overstated, might indicate the bike was owned by an idiot or is a fake. I love the fact that it has the wideline frame. Just my opinion, but a triton with a slimeline frame is rubbish - it is not what they were.

Just my opinion... I've ridden and raced both wideline and slimline... No perceptible difference in handling... Only difference I found is that the wideline tank bruised the inside of my thighs and the slimline didn't !

Everything is what it is.

It's what they were from the day the first one rolled out of the factory, and it's what was raced the day the first one took a green flag.

I was surprised when I rode the Z1 Kawasaki. After my wideline framed Triton it felt like a British 250.
