Seems like with a 360 degree twin a single carburator wouldn't be a bottleneck. What's the advantage to a dual setup? Less tortuous intake path or what?

Potentially better path, tuned length, higher vacuum, more tolerant of high overlap, more accurate metering.

Irrespective of carby type and make, the basic logic is that a single carb is fine for all round riding, chugging around town to freeway hauls. If you want to go for sports performance, then dual carbs offer more tuning potential. (plus twin carbs look the biz)

The reality of stock British twins is that between 650's as the best examples, the Bonnie was only marginally faster at the top end than the Tiger like the Lightning over the Thunderbolt. In terms of quickness off the line, there wasn't much in it until the redline.
