Whether you have twin or single carbs, the fuel economy should be the same. The most critical thing with tuning carbs, is to get the needles and needle jets right. That will give you the 'midrange rush'. But with either single or twin carbs, the result is substantially the same. I've had both single and twin carbs on the same bike. With a single carb, you only have one throttle spring, so you go faster.
 
I've had the slide hang up at high vacuum with a single 34 Mikuni. It really is so easy to turn the choke lever 180 degrees on a Mikuni that complaining about it is pretty silly. All you do is unscrew the brass part on the top, tuen the lever assembly and the lock spring 180 degrees, and screw it back together. One other thing I like about the Mikunis is the ability to loosen the manifold clamp, twist the carb, unscrew the top, and drop the needles when uou are in the mountains. No gas tank removal required.
 
The standard fix from long ago for sticking was to use an Amal spring inside the Mikuni spring. Or find a single stronger spring.
