Three unused wires (Interpol?) NB, NP, GP, on a 74 harness show on the wiring diagram as going between 2 terminal blocks. One I'm sure is in that big block under the tank. Where's the other end?

The white/red one terminates in the connector block under the tank and is hot when the spare button is pressed. I use mine to operate a homemade chain oiler made from a washer fluid pump. You can use it for anything else that you'd like to operate as long as you hold down the button.

Mine is being used for the e-starter. The 3 I'm asking about are brown black, brown purple and green purple which were used for Interpol horns and flasher.

I think they exit the harness somewhere around the frame grommet.
I'd have to look again but I think mine are tied off high, towards the front of the battery box.

They plug into a neuclear reactor in a parrallel universe .
This is why Nortn commandos are so fast .

I have removed all unused wires from the stock harness.

Which is the reason for my query. I want to reduce the bulk of connectors under my tank. Those 3 wires can be tied up with tape and eliminate the bullet sleeves. If the other end is in the battery compartment (thanks @MichaelB) they're already out of the way. Not looking to do major surgery to the harness, just want it a tad neater.
