When I eventually get around to needing to fit some electricity onto my Triton I will be needing a diagram to work from, if there is a basic one I can work from. I realise I will need to move things around, but just the bare bones would be nice to work with.

Magneto engine, so no coils and whatnot to worry about. It will be an alternator base, with Podtronics unit as the controller, gel battery and not much else.

Ammeter
Headlamp main and dip
Pilot light, including speedo and rev counter
Dip switch with horn push
Horn
Tail light
Stop light with switches off front and rear brakes.
Light switch off/pilot/head

Ideally, I will wire it negative earth from the start.

650 wiring diagram. Unfortunately pos earth but you can turn it around. Remove rectifier and replace with Podtronics. This is a good place to start.

A fuse might come in handy. Especially if you are not confident in getting it right first. I usually fit it between battery and earth. Big enough to handle horn and stop light.
You could add a magneto kill switch. Found it useful with carb stuck open.
I've found that earth connections is the most problematic part to get reliable. I usually have a fairly long M5 or M6 screw bolted to the frame. Star washer gives better contact. Ring connectors for wires to battery fuse, engine, regulator, head lamp, rear lamp (or rear mudguard) and maybe more. Then another star washer plain washer and nut. Don't think steering head bearings are meant to be used for earth connection.
I have never found any decent motorcycle ampere meters. Found the Battery Status Monitor that Alan Osborne and Paul Goff sells more useful and simplifies wiring. Can be connected between positive and negative in headlamp.
When you've drawn a decent diagram, make a sketch on how it fits on the bike. I sometimes find things to modify.
Just a few days ago came to think if another fuse fitted to the regulator output might be a good idea. Maybe or maybe not.

 
Of course only use finely stranded cables.
On colours. Normally you can't get as many colours as you want. Once fitted a Dommie with black only. Because that was what I had. Not recommended.
A few colours will do, if you choose wisely. Sometimes for colour I've used shrink tube or different coloured electrical tape on wires.
Wire gauge. Never wrong with thicker wires than needed. Will withstand vibrations better.
Wiring harness. Prefer using electrical tape and plastic tie raps fitting separate wires to frame. From frame to headlamp wires inside a plastic or rubber tube. Likely place for failures.
Wires never over a sharp edge. Insulation cut through gives intermittent shorts. Takes hours to find.
Prefer crimping over soldering. Though I've had a course in soldering MIL-spec military equipment.
As you seems to live in the UK, waterproofing the best you can seems a good idea.
For me, about version 3 rev. 4 wiring diagram is fairly good.
 
I have got a large selection of multi-coloured wires from previous harness builds, so no worry there. I prefer to crimp on “current” style multi connectors where I can, similar to those used on Japanese m/cs.

Not sure about your part of the world but https://www.britishwiring.com has all the colors in the proper wire for all British bikes I am aware of. They also have bullets and especially connectors that look like the originals but are higher quality. They most of the other things you would want as well.
