mk3 resurrection final tuning ?

I am just finishing a long resurrection of a mostly original 1975 Mk3. The bike is running rough with a noticable hesitation and hard starting.
The ignition is Trispark set at 31btdc.
Dual Amal 932's with 250 main and 106 pilot jets.
New Interstate battery and CNW charging system.
Examining sparkplugs shows whitish [lean] burn pattern.
Peashooter exhaust.
Stock Mk3 black plastic airbox.
Stock camshaft.
I have ordered 260, 270, and 280 mainjets.
Any suggestions, comments, or questions would be appreciated.

It's no use "just" blowing compressed air down the holes,
The "pressed in" jets need to be poked through, they crud up standing. take a single strand from a wire brush and crimp approx 10mm of it into the end of a drilled 5mm rod , remove the air screw and "twiddle" [between your thumb and finger]it down the carb hole...you should feel it pass through the jet hole. after a few pratice's you will do it easy.

...and, visually VERIFY flow through all passages with aerosol solvent (brake cleaner)
