Ah, so THIS is why the handling was twitchy!

Today I brazed a piece of 1/8" stock onto the stand where it "stops" against the cradle. That got the rear tire to ALMOST clear the ground. It can be jerked around but is still not clear. I put an 1/8" thick piece of wood panelling under the stand and that gets the rear tire clear of the ground by around 1/4 inch. So I think I will add 1/8" of material to the bottom of the stand. That should do it.

Off topic, but not quite.
I parked my Norton at a show a while back on grass, & a chap came along with a Pan European Honda & parked next to me.
He pulled a piece of 3/16" thick plywood from his jacket, put it under his bike & proceeded by putting the centre stand on it. Pulled the bike back onto it's centrestand, & hey viola, the stand went through the thin plywood & started falling over. We all rushed to help, laughing. Apparently, he had a strange name, I think it was Bloody Dickhead, at least, that is what his wife reffered to him as.
