3/8 in. Cylinder head nuts & bolts 30 ft./lb.
5/16 in. Cylinder head bolts 20 ft./lb.

the two nuts closest to the front in between the exhaust rocker covers are the 5/16 =20 ft lbs

How do you get to these bolts with a torque wrench when the engine is still in the bike? (replacing a head gasket) Any tips?

I have a 3/8" drive torque wrench and fitments, and as it is a bit smaller physically this makes it a bit easier, but I have to say that I used to manage OK with a bit of jiggling with the 1/2" t/wrench.

Regarding the three under head bolts, I use a calibrated arm as does ntst8, and have had no problems. I believe that there is a way of torquing these where you put a ring spanner on the under head nuts and for example, if the ring spanner is 12" long, attach a spring with a calibrated index and pull to the correct poundage. If the spanner is 6" long, double it etc, etc, but like I said, I do it by feel and have had no problems.
